Freeze-dried coconut water is coconut water (that liquid from inside the coconut) that is processed to make a powder.
A freeze-drying process (freeze-drying) is used:

the coconut water is frozen

the water is then removed in a vacuum by 'evaporating' it directly from the ice (without conventional heating)

the result is a fine powder that can be easily dissolved in water
Why it is done

the powder is easier to store and transport

has a longer shelf life

retains many of the natural substances from the coconut water (especially minerals)
When it's mixed in water, it's essentially coconut water "powder" that's used as the base of an isotonic drink.
